Weekend Inspiration
Try: This weekend, I hope, will be a lazy one. Last Mother's Day, Ray woke up really sick so all of our plans went out the window and I was left feeling.. less than celebrated. This year, I just want to relax at home with my family. And maybe some flowers. Flowers would be good. ;) I'm picturing slow meals outside while Emmett plays, basking in the afternoon shade.
My hair is really long right now and in desperate need of a good haircut, so I've been looking for new styles to try that keep it out of my way while still looking put together and cute. I'm planning to try this one over the weekend.
Buy: I need a swimsuit! It's already summer here in AZ, and we're heading to a friend's pool for the first time tonight. I've been avoiding the idea of a swimsuit with all my might, but it's time. I loved this one from Madewell- so bright and fun and flattering, maybe. It's on the expensive side (aren't all good swimsuits!), so I'll be looking for something like it, but less expensive. :)
Make: For a weekend like the one I'm hoping we'll have, crock-pot meals are perfect. Low energy, low effort, big results. BBQ is on my mind these days. Summer seems to do that to me. So I plan to make this delicious looking Brown Sugar and Balsamic Glazed pork tomorrow morning to last us through the weekend.
Bake: Every good weekend needs a little baking. Ray plans to head over to the condo tomorrow to finish painting the last bathroom that needs painting (praise the Lord), which leaves plenty of time for Emmett and I to make cookies. :)

Fish Tacos with Cream Cheese & Avocado Sauce, Corn and Avocado Salad, & Fresh Citrus Margaritas: A Complete Cinco de Mayo Meal
We had a few friends over for dinner this weekend. With Cinco de Mayo coming up, we knew we wanted to serve Ray's insanely easy and delicious fish tacos with margaritas to celebrate the holiday a little early. The party was a huge success- the kids played together really well (after a few minor melt downs over toys everyone wanted at once,) the weather was cool and breezy, and the food was a big hit! There's really nothing more special than sharing a meal with friends in our back yard while the kids play.
Since the food we served was delicious and really easy to make, I thought I would share the menu in case you're looking for a quick and easy Cinco de Mayo meal for your family.
The Menu:
Fish Tacos with corn or flour tortillas (Ray loves flour, I prefer corn.)
Cream Cheese & Avocado Fish Taco Sauce
Corn & Avocado Salad (My absolute favorite summertime dish)
Beans and Rice (We use Vigo brand- so good!)
Hot Dogs for the kiddos
Watermelon
Fresh Citrus Frozen Margaritas
Fish Tacos: Ray insists this is too simple to be called a recipe, which makes me even more excited to share it with you. I love a meal that's incredibly simple to make, but still tastes really good. Ray's fish tacos are absolutely one of my favorite things he makes, and our friends agreed. "So nummy!" as Emmett likes to say. ;)
Ingredients:
1 pound Wild Pacific Cod (This should serve three. For the party, we made 3 pounds.)
Old Bay Seasoning
1 box Beer Batter
2/3 cup beer (We used an IPA)
Canola oil
Directions: Slice fish into small pieces. Lightly season with Old Bay Seasoning.
Mix Beer Batter and beer in a medium-sized bowl.
Place enough oil in a pot or pan to submerge the fish, and heat it on medium high until it's hot enough to fry. Dip each piece of fish in the beer batter, then submerge in oil for 2 1/2 minutes per piece. Lay on paper towel to cool.
Serve with tortillas, cole slaw, and lemon slices. Top with sauce, recipe below. :)
Cream Cheese & Avocado Fish Taco Sauce: This sauce is based on a sauce we had with fish tacos at a friends house years ago in California. Ray and I still talk about that sauce anytime fish tacos are mentioned! It was so delicious, but our friends don't remember the recipe, so I tried to come up with something similar for our party. It wasn't exactly the same as the sauce we remember, but I'm really happy with how it came out. :)
Ingredients:
1 8 ounce package of cream cheese, softened
3 tablespoon sour cream
1 avocado
1 teaspoon freshly ground black pepper
1 teaspoon celery salt
2 teaspoons garlic powder
1 bunch cilantro, chopped
1 jalapeno, seeds removed, finely chopped
juice from 1 lime
Directions: Combine all ingredients in a medium-sized bowl, finishing with the lime juice, and mix in a blender or using a hand mixer. Serve cold with fish tacos.
Corn Salad: I crave this salad all year round. I wait impatiently for corn to be in season all through the winter until finally it begins to appear in stores again, and then I make this salad first thing and eat it straight from the bowl. It is my favorite dish to make in the summertime, so if you're going to a pot-luck with me this summer, expect to see it on the menu. :)
Ingredients:
5 ears of corn
2 avocados
1 bunch of cilantro, chopped
juice from 1 lime
olive oil
salt
pepper
Directions: Grill corn until blackened. If we don't have time to grill it, we'll put it under the broiler in the oven to blacken it a bit. Let corn cool, then slice the kernels off each ear into a large bowl.
Slice avocado and add to the corn. Add cilantro, salt and pepper to taste, and drizzle with olive oil, just enough to lightly coat the salad. Squeeze the juice from a lime over the salad, and mix. Enjoy!
Fresh Citrus Margaritas: We snagged a nice bottle of tequila on major sale yesterday, just in time for our Cinco party. We used grapefruit for our citrus because we have a grapefruit tree in our yard, but you can substitute lime, or orange, peach, watermelon, or whatever your heart desires. This recipe is for a large batch, and be warned, we like our margs on the strong side. ;)
Ingredients:
8 ounces tequila
6 ounces triple sec
juice from one grapefruit
8 ounces margarita mix
ice
Directions:
Mix ingredients together in a large blender and blend on high for about a minute and a half, until the ice is the desired texture. Enjoy, and drink responsibly!

Weekend Inspiration
Try: With Cinco de Mayo coming up, I'm looking forward to celebrating with friends in the back yard. I'm picturing twinkle lights, kids playing water games, and fresh margaritas made with citrus from our trees. Ray usually just wings the recipe, but this one is pretty good too. ;)
Buy: Spring seems to just be showing it's pretty face in most areas of the country, but here, it's Summer already. The high over the weekend is supposed to be 100, which means 110 and 120 are just around the corner. I'm not excited about any of that, but I am excited about shorts. These are on my dream list.
Make: Speaking of Cinco de Mayo, a version of these are on the menu for a little party we're having on Saturday. I'm hoping to share the recipe before Monday. We'll see if I get to it! ;)
Bake: I've been craving these insanely delicious salty-sweet bars for weeks, so I'm hoping to make a big batch in the morning. Yummmmmmm.

Weekend Inspiration
Try: This weekend the weather is supposed to cool down a little bit. I'm picturing cocktails in the back yard with my husband while Emmett plays before bed. I love anything with cucumber in it, and we have grapefruit growing in our side yard, so these grapefruit cucumber cocktails are the perfect drink to try!
Buy
Make: I bought a pizza dough from Trader Joe's on Monday that we've yet to use, so tonight I'll ask Ray to grill a pizza for us. This one from Martha Stewart looks amazing. I'll probably add ricotta because I'm obsessed with ricotta. And maybe a little basil from our garden.
Bake: I want to be one of those moms who bakes bread. I love the smell of bread in the oven, and I love freshly baked bread so much. But I have to admit I'm intimidated. I think this weekend I'll start with a simple recipe like this one, and if it goes well, I'll try something a bit more labor intensive next time.

Weekend Inspiration
Try: I am not crafty. And Emmett isn't really old enough to get into dyeing eggs with me.. Right? But I'm determined to try, if only to keep the tradition alive in our family. We always dyed eggs when we were kids, and I want that for Emmett, too. And I can't resist adding glitter, if I'm going to be crafting anyway.. So I'll try to mimic these pretty eggs.
Buy: I know, I know, I keep talking about how tight money is. And it really is y'all. But again, I'm all about keeping up with family traditions, and that means Easter baskets. We played with these amazing fruit toys at a friend's house yesterday and Emmett was enthralled! He sliced those fruit and put them back together over and over again all day! That's a toy I want in our house. So I'm thinking instead of candy and a few small things, I'll pick this up for Emmett's basket.
Make: I'm a big, big fan of Thai rice and noodle dishes. I could eat them every night of the week, no problem. But I've never found a recipe I could make at home that really, truly hit the spot. I found this one on Pinterest and it looks amazing! I'm thinking I'll add chicken, and enjoy it with a cold beer and my husband in our backyard.
Bake: Have y'all seen Mary Beth's (of Annapolis & Company) insanely beautiful recipe series on The Wiegands? I drool over every recipe, and every photo. Mary Beth is my food photography hero. This recipe in particular looks so easy to make, and I know Emmett will scarf that peanut butter granola down so fast at snack time. I can't wait to bake some tomorrow! I might even let him help. ;)

Simple & Delicious Mint Chocolate Chip Cupcakes
I love a good chocolate cake. Chocolate has become my favorite indulgence, so chocolate cake with chocolate frosting is my very best dessert friend. I found these cupcakes years ago in a cookbook (500 Cupcakes by Fergal Connolly
A good friend had minor surgery yesterday, so I wanted to make something special to help with her recovery. Although I hadn't made these cupcakes in a few years, I knew they were the perfect treat!
These are the easiest cupcakes I've ever made, by far! There are just a few ingredients, most of which you probably have in your pantry already, and they take no time at all to make! The chocolate chips make the batter gooey and chocolatey, and baking them low and slow ensures that they come out soft and melty every time.
Cupcake Ingredients:
1 cup semisweet chocolate chips
2 1/2 sticks unsalted sweet cream butter
5 eggs
2/3 cups granulated sugar
3/4 cups self-rising flour
Directions:
Pre-heat oven to 325 degrees. Line cupcake pan with paper baking cups.
Melt chocolate chips and butter together in a double boiler. If, like me, you don't own a double boiler, use a medium glass or metal bowl placed over a pot of gently simmering water. Stir often until fully melted. Set aside to cool slightly.
In a large bowl, beat together eggs and sugar. Fold the flour into the egg mixture until well blended, then slowly mix in the melted chocolate and butter.
Spoon the batter into the baking cups, and bake for 20 minutes. Remove pan from the oven and cool cupcakes before frosting.
Mint Chocolate Chip Frosting Ingredients:
2/3 stick unsalted sweet cream butter, softened
2 cups confectioners' sugar, sifted
1 tsp peppermint extract
green food coloring
semisweet chocolate chips
Directions:
Beat butter and confectioners' sugar together in a small bowl until smooth and creamy. Stir in the mint extract and just enough food coloring to turn the frosting a mint green. If the frosting is too thick, add more butter or a few drops of milk until frosting is the desired thickness.
Frost cupcakes and decorate with chocolate chips. Enjoy!

Easy & Delicious Crock-pot BBQ Chicken Sandwich
Since I quit my job a couple of months ago, I've been cooking more. I almost never had time to cook when I worked full time, so I'm trying to ease myself in to domestication with simple, inexpensive meals that don't take a lot of hands-on time. Emmett has been teething big time this week, and we're still only half-moved into our house, so I was in need of an easy recipe I could make between bouts of "mamamama"and unpacking/decorating/cleaning/working. As always, leftovers were a must.
The original recipe for BBQ pulled pork comes from Paula Deen (who shares my more-butter-is-always-better food philosophy. Ray found it months ago and tweaked it to work for BBQ chicken. We've made it for friends who just had babies, BBQ's in our back yard, and for meals to last all week for the three of us. This week we had BBQ sandwiches for dinner one night and made double-decker chicken tacos with the leftovers!
Ingredients:
2 tbsp salt
2 tbsp ground pepper
2 tbsp dark brown sugar
2 tbsp paprika
1/2 tbsp cayenne
1/2 tbsp garlic powder
4 lbs boneless, skinless chicken breast
2 cups apple juice
1 cup apple cider vinegar
2 tbsp Worcestershire
Directions:
Mix the dry ingredients in a bowl to form a rub. Sprinkle dry rub all over the chicken breasts, pressing in to the chicken. Wrap in plastic and refrigerate for at least 2 hours.
Add the wet ingredients and chicken breasts to your crock-pot and cook on high for 4-5 hours or until the chicken is tender and easy to shred.
Remove the chicken from the crock-pot and let it rest until it cools enough to touch. Use forks to shred the chicken.
For BBQ sandwiches, top with your favorite BBQ sauce and serve on hamburger buns.
For tacos, serve with beans, cheese, avocados, sour cream, and any other favorite taco toppings!

Weekend Inspiration
I made these cheesy potatoes a while back, and oh my goodness they were good. I ended up finishing them off with club crackers, because as we all know, every starch just needs another starch to go with it. The blasted weatherman ("sunny, then sunny and hot, then hot and even more sunny") is predicting rain for this weekend. I'll believe it when I see it, but just in case, these are going in the crock pot first thing tomorrow. They are the perfect thing for a rainy day!
I want my hair to look like this. All.The.Time. Alas, I don't have perfect hair and no matter what I do, my braids always look like a 2 year old did them so it's probably never gonna happen. That's not going to stop me from trying to achieve this look this weekend!
Speaking of this weekend... We got a call from our new landlord on Thursday telling us the house is ready for us to move in right away! We are a little bit in shock, a lot excited, and more and more ready to start moving in. I haven't packed a thing, and it may or may not rain on our moving parade, but I'm taking deep breaths and telling myself it's all going to work out just fine. I can't wait to start organizing all of our things again. Hoping it turns out a bit like that photo above. :)
One of the things I'm looking forward to the most is starting fresh with Emmett's room. I almost called it a nursery, but he's a kid now apparently so let's just call it his room. I'm thinking lots of animals because he's obsessed with them, tons of books, and a little reading nook in one corner.

Quick, Easy and Delicious Oatmeal Chocolate Chip Cookies

I've been making these cookies since high school. They are the first thing I learned to bake, and in the fall my friends and I would make them after school for a quick and easy snack. We would eat the dough from our spoons and bake a few batches, then bring them outside to our friends playing basketball next door. Oh, how simple life was back then!
Each fall, when the weather begins to cool, I start craving these cookies. They are so easy to make, I can whip them up and have them warm out of the oven in half an hour. So whenever I'm craving something sweet, this recipe is the first thing I think of!
The original recipe came from the inside of the Quaker Oats box top. I memorized it years ago, and I've made a couple of minor adjustments, but the Quaker Oats recipe will always bring back years of happy memories for me.
Ingredients:
1/2 cup (1 stick) of unsalted butter, softened
3/4 cup light brown sugar, firmly packed
1/2 cup granulated sugar
2 eggs
1 tsp vanilla
1 1/2 cups flour
2 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
3 cups oats (always use the old-fashioned oats! quick oats are chopped up really small, so you don't get the same oaty texture from them)
1/2 cup semisweet chocolate chips (or 1 cup raisins, if you must)
Directions:
Preheat oven to 350 degrees.
Using a mixer, beat butter and sugars together in a large bowl. Add eggs and vanilla, and mix. Slowly fold in combined flour, cinnamon, baking soda and salt, and beat until smooth. Add oats, then chocolate chips, and mix well.
Line baking sheets with wax paper (aluminum foil heats and bakes the cookies from the bottom up, which I hate!), and drop spoonfuls of dough 2 inches apart onto the paper. Bake 8-10 minutes. Cookies will just barely begin to brown around the edges.
And that's it! Easy as pie. Or really delicious cookies.

Avocado Toast + How To Make A Perfect Soft-Boiled Egg
I posted a photo of my favorite breakfast to Instagram recently, and got a few requests for my recipe for a perfectly cooked soft-boiled egg. So, here it is!
Set your timer to 6 minutes 30 seconds, add your eggs to the boiling water, and cover with a lid. Start timer. *If you like your yolk really runny, set your timer for 6 minutes 20 seconds. If my whites are even a tiny bit runny I lose my stomach, so I cook mine for just a little bit longer.
Have a bowl of cold water ready.
When your timer goes off, use a spoon to pull the eggs out of the water immediately. Transfer them to your bowl of cold water to stop the cooking and cool the shells so you can peel them.
Once the eggs have cooled slightly, peel the shells. *TIP: Add a teaspoon of baking soda to your boiling water to make shells easier to peel!
Avocado toast:
While your eggs are boiling, toast your bread and smear on a little bit of mayonnaise. (Or a lot, if you're me...) I like to use a wheat or grain toast, but choose whichever bread is your favorite.
Cut your avocado in half, and slice longwise while still in the skin. Slice across each half a few times to cut avocado into small chunks.
Spoon out the avocado, and smear half on each slice of toast. Spread evenly.
While your eggs are boiling, toast your bread and smear on a little bit of mayonnaise. (Or a lot, if you're me...) I like to use a wheat or grain toast, but choose whichever bread is your favorite.

Spoon out the avocado, and smear half on each slice of toast. Spread evenly.
Place one egg on each slice of avocado toast, and use a knife to break the egg. Chop the egg on top of your toast, and finish with salt and pepper.

Currently. Seven
Watching: Friday night, after Emmett went to bed, Ray and I sat down to watch a movie together. We don't do that often anymore - Ray loves to watch movies, but since having Emmett, I struggle with movies. I fidget, and need to be busy all the time, so I end up playing on my phone or blogging or something and miss all the important parts. Also, movies affect me. I love movies, really I do, but I have to be incredibly careful what I let myself watch because the things I see affect my mood and my heart and mind for days afterwards. Sad scenes hurt me and I can't let them go. It's a problem.
But it was Valentine's Day, and my husband wanted to watch a movie. We searched through Netflix looking for something we'd both love that wasn't sad at all, and finally came across Warm Bodies. We both said that's it! at the same time. I know, it's a zombie movie. But y'all, its really really sweet. And not gross or violent like you'd expect. There's a little bit of violence and a little bit of brain eating, but it's really not horrible. I promise!

Befuddled by: This weather. High 80's all week and I'm dying. It's not right to be sweating in February. I know most of the country is dealing with insane winter storms and begging for Spring, but all I want is a normal, cold winter day. When the weather is warm this early in the year, all I can think is SUMMER IS COMING and I know I'm never gonna make it. It'll be August before we know it and I'll be melting and losing my mind.
My hometown was it with a crazy ice storm last week that caused trees to fall all over the place, taking power lines down with them. Everyone I know there was without power for at least a full day, many for two or three days. They were eating off the grill and bringing hot bricks inside to stay warm. Meanwhile in Arizona... Then to top if all off they had an earthquake late Friday night to throw them into further hysterics. Such a weird week in Georgia!
Thankful for: My family, of course. I love that husband of mine and that little angel baby so much it hurts a lot of the time. I am a lucky, lucky girl. It's easy to fall into wanting- wanting a car that works and a home of our own and another baby (any day now, God!). But all I need to do is look into Ray's bright blue eyes or listen to Emmett chatting away to his toys to remember that I'm content with what I have. It's enough, it's wonderful, and my life is so full.
Our Weekend: It was another good one. Friday I started making sugar cookies and finally finished them Saturday afternoon. I always forget that sugar cookies are such a labor of love. They take forever! I made the dough on Friday and chilled it overnight. Then I baked them Saturday morning and spent the afternoon decorating them in between writing for work. I had a big deadline, so I made myself write between batches.
They came out almost as pretty as the pictures from the recipe, so all that work was worth it in the end. We brought them to a Lord's Day dinner at a friend's house Saturday night, and brought the rest to neighbors Sunday afternoon. I love doing that. Baking something sweet to surprise neighbors with. It always ends up being such a blessing to me and to them. One friend told me she was having a hard time at work and her baby hadn't been sleeping and she needed something sweet so badly that day! It's funny how God does that - uses us to bless our friends. Another neighbor gave me a cookbook that I'd been admiring on her coffee table. I'm so excited to try some of the recipes!
There were definitely moments when I wanted to give up on the cookies, when Emmett was clutching my legs crying and I couldn't pick him up because my hands were caked with icing, when I needed a shower and we were running late for dinner and I just had a few more to finish! I was having doubts about dropping by at neighbors houses unannounced. But I'm so glad I pushed through. It was fun and I hope to do a lot more of that with Emmett in tow.
^^^Valentine's day morning date at Chic-fil-a with my littlest Valentine, and yes, that biscuit is heart shaped. Just one of the million reasons I love breakfast at Chic-fil-a. My sister sent me that little love bobby. Isn't it sweet? For dinner Ray and I made one of my favorite appetizers- crustinis with mozz, tomato, basil, olive oil, balsamic and a splash of lemon. Yummmm.
^^Helping mama make icing, and that's me enjoying leftovers in bed with my new cookbook while Emmett napped yesterday. Best way to spend a nap time ever!

Salt River Bars
Since the first time I tasted one of these at Liberty Market in Gilbert, Arizona, I dream about them. Like, once a week. They are my all-time favorite desert, hands down! So when my mom came across a recipe online, I was thrilled to try it!
The first time I made them, I followed this recipe. I wanted tons, so I made the recipe for a 9 x 13 pan instead of the 8 x 8. They were so good! But I knew I could make some minor changes to make them taste a little bit more like the ones at Liberty Market.
So, here's what I did:
Ingredients:
1 box of Club crackers
1 1/2 cups butter (3 sticks)
1 1/2 cups brown sugar
1 jar of real peanut butter
1 cup butterscotch chips
1 1/2 cups semi-sweet chocolate chips
Course sea salt
Directions:
Line your 9 x 13 pan with aluminum foil so that the edges hang over the side. This will make it easy to lift the bars out of the pan when they are finished. Spray with non-stick cooking spray.
Layer the pan with Club crackers. Sprinkle 1/3 of the butterscotch chips on top, then drizzle peanut butter over the crackers. My peanut butter was really liquidy (is that a word?) so it was easy to drizzle, but you may need to heat yours up first. I wanted just a hint of peanut butter so I didn't add much, but you can add as much as you like.
Over medium high heat, melt butter and brown sugar together, stirring constantly, to form a caramel. It took me a little over 4 minutes, just like the original recipe says. You'll notice the mixture become smooth and begin to bubble when it's ready.
Pour 1/3 of the caramel over the crackers, butterscotch and peanut butter. This melts the butterscotch chips and peanut butter so you can spread them all out evenly if you want. I'm neurotic, so I did.
Add another layer of crackers, then butterscotch, peanut butter and caramel, and then repeat one more time. Top the last layer with crackers. Aaaand I just realized I forgot to add the top layer of crackers. Whoops!
Melt your chocolate chips, pour them on top, and spread. The first time I made these I thought there was too much chocolate. I know, that's crazy! I was trying to replicate my beloved SRB's from Liberty Market, so I wanted just a little bit less. Also, the second time around I didn't scrimp on the chocolate chips. I bought the expensive ones, and it made a big difference. Sprinkle sea salt on top and pop in the fridge!
The original recipe says to take the bars out of the fridge after 20 mins to lightly cut through the bars to make it easier to cut through once they're fully cooled. I tried that the first time and the layers were still too melty, so I just waited to cut them until the end.
I made mine after dinner and left them in the fridge over night, but I'm sure they'd be ready after just a few hours. Tooootally up to you.
They aren't exactly like the ones at Liberty Market, but they're pretty darn close and who cares! They're so delicious. I brought them to a Super Bowl party and everyone raved about them! I left with an empty plate, so I guess everyone must have loved them. These will definitely be my go-to party dessert from now on!

Be sure to save the crumbs! I left mine on the counter for a few minutes, and when I came back to the kitchen, the foil was practically clean! My family is just as obsessed with these as I am.
